Coconut Buttercream Easter cupcakes


 I've seen these on a couple blogs.
The nests, I first saw here, at Nutritious Eats. It's pretzels covered in chocolate. Then I saw them as cupcake toppers for Easter here, on Cupcakes for Party
So cute, and so easy. 
The icing is amazing! My friend Sheila, made sugar cookies for the Super Bowl and introduced me to Coconut Oil. She used the Wilton Buttercream Recipe, but instead of shortening, use coconut oil. I added drops of blue and green to get a Robin's egg blue icing color. The last cake recipe I did was a complete flop..."moist delicious cake" turned out to be dry and dense...so I paid 92 cents and let Betty Crocker do the rest:)
