Happy Easter Cakes and Mushroom & Tomato pasta

I've showed you my Easter cupcakes from last year and wanted to show a preview for this Sunday. I signed up to make 4 dozen goodies for church, so I had a little extra batter and prettied up six cakes!
The main recipe for this week is a yummy pasta sauce. It really was heavenly...even my boys ate it all

  Recipe
I had a box of mushrooms that I needed to use, so I started there and sauteed them in butter...lots of butter! After browning, I added salt, pepper and a bunch of chopped green onions. Let it cook a while and then added a can of tomatoes with garlic and olive oil (because that is what I had and it turned out really well!). I had some leftover cooked chicken breast, so I cut it up and added it to the mix. Right before serving, I stirred in a little milk...cream would be great too and then poured it over rotini pasta. I added some of my marinated feta on top and it was delish!

 The Peep took up almost the entire cake! I might end up making a decorated 9 x 13 cake for our Easter potluck Sunday night...

  2. Hi Meredith...thanks so much for visiting my blog and leaving such a nice comment. I have a boy and a girl...my daughter is oldest. We had our moments (mostly when she was in high school and I didn't know ANYTHING!) I have gotten smarter as she has matured. :o) It's no surprise that I think she's the best daughter ever! I worked very hard raising my son to make sure I had an open and special connection to him. He played Jr. Golf from the time he was 8 yrs. old. We traveled every summer from golf course to golf course. I loved every minute and knew someday I could look back and say I made the right choices. I was one of those moms who always put my kids' needs before my own...some women say that's unhealthy but I didn't know how else to do it. They turned out pretty good so I must have done something right! As your boys grow older it will get harder to carve out time for just your family. Dinner at the table is the best and easiest way to do it. Be realistic that it won't happen every day. But even a few times a week will keep you all on the same page.   6. Gosh, Meredith, I'm almost licking the computer screen because that looks so good. Like the idea of marinated feta in with the pasta. Definitely trying this one. Cute blue peep on the cupcake. I haven't had any peeps in years. I may just have to go to the store tomorrow.
